Don't know whether you can find the Vietnamese salami in Shanghai.
Here's a recipe to make a small one, good for 2-3 servings.
Vietnamese Salami (Gio Lua)
Ingredients:
1/2 Tablespoon sesame oil mixed with 1/2 Tlb veg oil
1 Tablespoon fish sauce
1 Tablespoon sugar
1/2 tablespoon five spice powder
1 shallot (chopped)
2 garlic (chopped)
1 tablespoon potato starch
1/2 teaspoon baking powder
dash of salt
1 teaspoon of black pepper
300 gms ground meat ( pork or chicken)
1 banana leaf lightly oiled
1 string
Method:
1. Mix oil, fish sauce, sugar and spices together.
2. Add in garlic, shallots & minced meat.
3. Knead all together for 10 mins to combine.
4. Cover bowl and chill in fridge for 1 hr.
5. Boil a wok of water & top with a bamboo steamer.
6. Take out meat mixture, add in potato starch & baking powder. Thump out the air and knead a couple of mins for it to combine
7. Form into a sausage roll (about 5cm diameter)and rub lightly with oil.
8. Roll on an oiled banana leaf, tuck in the ends and tie with a string. Steam for 40 mins.
9. Cool first before unwrapping & cutting the salami.
Note: you can add 1/2 Tlb extra fish sauce if you like a stronger taste.
Yep, I love some of the Vietnamese food too & also desperate at times as the Vietnamese restaurants in Shanghai sucks!
I use a Nom Gia salad, substitute the crabmeat with salami. This is the only Vietnamese salad recipe I have, but I substitute with other ingredients ( shrimps, chicken etc) to get a different variation.

Nom Gia( Bean sprout & crabmeat salad)
Ingredients:
Seasoning
1 large clove of garlic (chopped)
1 fresh chilly(chopped)
1/2 tablespoon sugar
1 tablespoon fresh lime juice
1/2 tablespoon vinegar
1 tablespoon fish sauce
1 tablespoon oil
1/2 carrot shredded
1/2 cucumber (peeled, seeded and cut thinly)
salt to taste
200gm fresh bean sprouts(remove tails if possible)
200gm crabmeat or substitute withsliced salami or steamed shrimps
2 sprig of fresh coriander, basil leaves, mint (chopped coarsely)
1-2 tablespoon roasted peanuts( can use the packaged types)
Method:
1. Mix all seasoning together. Taste & adjust with additional fish sauce/lime juice etc if required.
2. Add a sprinkle of salt to carrot & cucumbers & give a round of mixing. Wash under running tap water, squeeze slightly to remove water and dry with kitchen towel.
3. Add everything together in salad bowl and toss.
