There is one receipe that I forever wish to make for my family here in Hong Kong MEATLOAF. I have searched for ingredients in major super markets that have American products as this is an American special dish and have not found it. Does anyone have an idea?

You don't need any special American products to make meatloaf, as it is basically minced meat plus whatever seasonings/breadcrumbs/onion/etc your particular recipe calls for. Everyone seems to have their own variation so there are hundreds of different recipes. I haven't had it for many years so I don't have a recipe, but if you do a Google search you will be overwhelmed with choices.

or try using 50/50 mince pork and roast ham etc. etc. If you can't find any recipe that works for you off the net, let me know and will give you my tried and tested recipe that freezes well too.

Oh sure..but will need to find it first - my adaptation as opposed to the original which was dry and bland.

Half lean ground beef and half lean-ish ground pork makes the best meatloaf. Maybe half a kilo of each.
Then add an egg, some grated carrot and minced onion, seasoning of choice (you can use curry, a bit of dry mustard or barbecue sauce, or cumin or salt and pepper). A few shakes of worchestershire sauce, a big handful of breadcrumbs or rolled oats and mush it about with a plastic bag over your hand so you don't get all messy. Put it in a loaf pan or in muffin cups for quicker cooking. Bake at 350 for 1 hour for the loaf and half an hour or less for the muffin sized ones.

And you can put a couple of bolied eggs into the mix too - complete - just put some mince on the bottom of the pan, stick a boiled egg and cover with more mince - yummy!

I also use half proportion of ground beef and ground pork, potato starch, egg, chopped onions, garlic powder, salt and pepper.
For added flavor (and definitely added calories!), line a loaf pan with slices of bacon to cover bottom and sides. Add meat mixture. Cover with foil. During the last 10 minutes of baking, loosen the sides, invert on a plate then transfer back to the loaf tin, bacon side up. Do not cover. Broil until bacon is golden

Hey Ruth I did try out you style and it came out nice though abit soft inside ,don't know what I did wrong or maybe I put something less or more. The following day it was even more tastier than the day I cooked, was even more interesting when making meatloaf sandwich hehehe Thanks My family says it should be in the meal timetable twice a week heheheh.

To broil is to cook/grill under direct dry heat.
If your oven comes with several heat selections-- bottom, top, top and bottom, choose the top only to broil

thanks all for enlightening me ;=) i was totally convinced that it was some complicated procedure involving pans of water inside the oven! (don't ask me why).
I tried Ruth's recipe on monday using lean beef and pork and it came out really well. the prep time is so short and it's really quick and easy too.
