Ok !! If the weather is as cold as this on saturday night i want to make a nice casserole. any ideas?? Would probably do lamb but even a good old apricot chicken recipe might be the trick. I will probably do 2 dishes. thanks Sandy

Here's one I haven'ty tries yet, but it looks good.... multiply the ingredients for how many people you have....
Chicken and Mushroom Casserole

from Ready Steady Cook
Serves 1
Preparation time less than 30 mins
Cooking time less than 10 mins
Ingredients
110g/4 oz mushrooms, sliced
1 tbsp olive oil
For the chicken patties
½ chicken breast, chopped
salt
freshly ground black pepper
1 clove garlic, chopped
handful parsley
30g/1oz bread
1 egg
For the casserole
1 clove garlic, crushed
1 glass white wine
½ tin chopped tomatoes
2 spring onions, sliced
Method
1. Put all the ingredients for the chicken patties into a mini food processor.
2. Blitz until combined.
3. Make into small balls.
4. Fry the mushrooms in oil for 3-4 minutes.
5. Add the chicken patties and fry for 3-4 minutes.
6. Add all the other casserole ingredients and simmer for 6-8 minutes until the chicken is cooked.

or a beef and ale pie... always rich tasting.... replace the scotch beef for whatever beef you might use (or scotch beef if you can find it...!)
Scotch Beef, Ale and Mushroom Pie
by Department for Environment, Food and Rural Affairs
Serves 4
Preparation time 30 mins to 1 hour
Cooking time over 2 hours
Ingredients
900g/2lbs Scotch beef stewing steak
vegetable oil
1 medium onion, peeled and diced
1 tbsp plain flour
1 tbsp mushroom ketchup
1 tbsp Worcestershire sauce
1 handful fresh thyme, marjoram and chopped parsley
1 tsp English mustard
1 bayleaf
salt and cracked black peppercorns
150ml/ 1/4 pint beef stock
125ml/ 1/4 pint ale
225g/9oz mushrooms
450g/1lb puff pastry
Method
1. Cut the beef into cubes about 2.5cm/1in square.
2. Heat oil in a saucepan and fry onion, without colouring.
3. Add beef, making sure the meat is at room temperature first, and cook until medium brown.
4. Stir in the flour and cook until dark brown (about 1 minute).
5. Add mushroom ketchup, Worcestershire sauce, thyme, marjoram, mustard, bay leaf and seasoning.
6. Slowly add beef stock and ale then bring to the boil.
7. Add mushrooms and simmer gently until beef is almost tender, approx. 1 1/2 hours.
8. Preheat oven to 200C/400F/Gas 6.
9. Remove meat from heat, skim off any fat, adjust seasoning and add fresh chopped parsley.
10. Place in pie dish or individual dishes. Cover pie dish (or dishes) with the pastry and trim edges.
11. Bake for 20-25 minutes or until pastry is well-risen and golden brown.

hey girls.... they both sound fantastic. one red and one white meat. Perfect. when a recipe asks for ale should I use lager or a bitter beer?? Ill let you know how they turn out!!!

you should use a bitter beer for the ale..... something like "spitfire" or "Speckled hen"....
I was a bit concerned about the "girls" comment.... I might be in touch with my feminine side more than most, but skirts just don't suit me...!!... LOL....

sorry nick!!! I don't usually generalise like that!!! Your chicken meatballs were a hit. Ended updoing a beef in red wine and a tandoori chicken. I am going to attempt the ale pie. It might just end up a steak pie and Ill just drink the ale!!! hahaha. Where were YOU when I was single????
