How long can one keep hard cheeses such as Parmisan or Pecorino in the fridge?

If they are sealed, until they start to go mouldy.
But mine never lasts that long.

Don't forget the freezer. Keep what you expect to use soon (a week or two?) and freeze the rest. I do the same with Philadelphia cream cheese - cut it into sections and freeze what you will not need this week. Chris the Cheapskate
