I've tasted this ube colored pudding with small sago in it. It looks simple but i don't know how to make it, anyone knows? and what's the name so i can surf the receipe. Thanks.
Here is a recipe which I found in one of my cookbooks:
Sago Pudding with Melon
1 oz sago
1 cup water
1 cup coconut milk with a pinch of salt
Sugar to taste, about 1 Tbsp
1/2 cup diced melon or other fruit
About 1 Tbsp cornflour mixed with 2 Tbsp water
Soak sago in water for about 30 minutes. Drain. Place in a pan of boiling water and cook until transparent, about 10 minutes. Drain.
Boil the one cup of water and add cooked sago. Add sugar and cook until sugar melts. Stir in cornflour solution to the desired thickness. Turn off heat and add coconut milk. Allow to cool before adding fruit. This dish can be served hot or cold. It thickens slightly when cooled. A little extra coconut milk may be added before serving.
If you want to make this with ube (or taro as it is called where I come from), then prepare it as follows: peel the ube and cut into cubes. Soak in water for an hour, changing the water frequently. This removes the excess starch. Then boil it until it is soft, about 10 - 15 minutes I would guess. Then add it to the above recipe.
By the way, in Cantonese it is called "sai mai lo". Sai mai means sago.
