Play with the recipe until you get the consistency and flavour you like... you can also used canned chickpeas for easier & faster recipe (just rinse them well).
Hummos Recipe
100g dried chick-peas
6 large garlic cloves, peeled
5 or 6 Tbsp extra-virgin olive oil (a good one!)
3 Tbsp tahini
1 Tbsp fresh lemon juice
1 Tbsp black pepper
2 Tbsp paprika
1. Place the chick-peas in a large bowl. Cover with water and leave to stand for at least 12 hours until they double in size. Change the water as needed.
2. Put the drained chick-peas in a saucepan and add twice the volume of water. Bring to the boil for 10 minutes.
3. Lower the heat and simmer for at least 1 hour, until the chick-peas are very tender. During this time, change the water at least once.
4. Drain and wash the chick-peas.
5. Put the olive oil, garlic, tahini and lemon juice and black pepper and paprika in a blender and blend until smooth.
Add the chick-peas and blend until they are finely ground.
If the mixture is too thick, add a little more olive oil.
6. Transfer to a bowl, cover, chill until ready to serve.
7. To serve, drizzle with some olive oil, sprinkle a little paprika over the top.
