Favorite Salad Dressing

For salad greens..pasta salads..
Let me share mine:
Mango-Cilantro Dressing:
Flesh of 1 ripe mango, pureed
4T honey
2T cane vinegar
2T light olive oil
1T chopped cilantro
salt to taste
Combine all ingredients in a screw-top jar and shake til well-combined. Works well with grilled prawns, salad greens and additional slices of ripe mangoes.

I am soooo boring:
excellent olive oil
good balsamic vinegar
a bit of grainy mustard
some black pepper
fresh herbs optional
Put in glass, stir with fork :)

red wine vinegar
Put in a screw-top jar and shake.
If putting in extra effort, the Wagamama dressing (from the restaurant of the same name) is worth it.
A lovely combination of finely chopped shallots, fresh ginger, garlic, rice vinegar, tomato ketchup, water, vegetable oil and light soy sauce.

Apple cider vinegar
extra virgin oil mixed with a tsp of Wasabi( this is Japanese Horseradish, avail in a tube or pwder form)
Red pepper mixture ( this is a pre-mix of red pepper, seaweed, sesame seed, ginger and avail in Japanese section in s'mart)
salt & sugar

You can't beat a good mayonnaise; the best oil, egg yolks, lemon, salt, a tiny bit of vigourously crushed garlic, and cayenne pepper (if wanted). And anyone putting mustard in will answer to the culinary inquisition.

what brand of EVOO do you use?
I'm happy with Bertolli, but am willing to try better quality bottles

Well I'll "blame" my ancestry for preferring Italian oil. The most important thing is that the EVOO is cold first pressed, anything else is, well, dregs. If I went for expensive ones I would use less but I like a generous splash of oil so I use Colavita, which is both Italian and cold first pressed. It's also reasonably priced, IMO.
Funnily enough, many years ago I was bemoaning the fact that Colavita was not available in HK to a friend when I was overheard by a man who said he was about to start importing it. I've used it ever since.

does anyone know the recipe similar to those japanese salad dressing you can buy? seems like it has soy sauce, garlic etc.
